Well, as you know, Lew has been a vegan for over 6 months now and is really committed to it. I don’t see his diet changing anytime soon, perhaps not ever. You may also know that he lives with two people who are not vegan. Pete and I happily eat meat and dairy and eggs, though I take a fairly big stance on eating those foods which are as ethically grown and produced as possible. I don’t see our diet changing anytime soon, perhaps never.
But, I do love to eat the same meal, as often as we possibly can, for a couple of reasons. It’s easier is the main one but also, I think it’s really nice to share the same meal together. I’m not sure why that makes me feel good but it does.
So, I find myself scouring cool vegan blogs and recipe sites searching for yummy stuff for us to eat together. I love to cook so usually I don’t find it a problem when the recipe asks for 10 steps to go through. Vegan recipes are fairly renowned for having a lot of fiddly steps. But sometimes I just like to make stuff up, easy stuff with simple ingredients and have some fun mixing them all together. Sometimes I’m too tired to be bothered with all the soaking of this and that and the 10 steps.
This salad is something we’ve had a few times now. It’s just quinoa, raw cashews, fresh shallots, tomato and basil drizzled with lemon and olive oil and sprinkled with some sea salt and pepper.
So easy. So quick. So yummy. Fully vegan. And it always looks happy and lovely on a blue and white vintage willow plate which is, of course, extremely important. OK, maybe only important to one of the three of us.
